Chicken
Salad with Mango Orange Dressing

Mediterranean Jewel Mango Vinegar

frozen orange juice, concentrate

Mediterranean Jewel Citrus Oil or Mediterranean Jewel
Extra Garlic Oil

Dijon mustard

honey
¼

red
onion, chopped
zest of one orange

cups
cooked chicken, cubed
4
stalks
celery, chopped

or 2
mangos, peeled, sliced and cut in 1” cubes

cup
raisons and/or pecans

Whisk together Mediterranean Jewel Mango Vinegar, orange juice, Mediterranean
Jewel Citrus or Extra Garlic Oil, Dijon mustard and honey.
Add chopped red onion and orange zest. Let stand for one hour.

In a large bowl, mix chicken, celery, mango and raisons.
3.
Pour dressing over chicken mixture and chill for several hours. Garnish
with orange slices and a few pecans.
