Chicken
with Porchetta and Cheese
4
chicken breasts, skinned and boned
Flour
seasoned with salt and pepper, for dredging
3
– 4 leaves of fresh sage
¼
cup butter
½
cup of grated Parmesan Cheese
8
thin slices of Casa Italia X Lean
Porchetta (Roasted Pork Loin)
1.
Cut each breast in half lengthwise to make two flat fillets of
approximately the same thickness. Dredge
the chicken in the seasoned flour, and shake off the excess.

Preheat broiler. Heat butter
in a large frying pan or skillet with sage leaves.
Add chicken in one layer, and cook over low to moderate heat until golden
brown on both sides.

Remove chicken from heat, and arrange on a flameproof serving dish or
broiling pan. Place one slice of Casa
Italia Extra Lean Porchetta
on each chicken fillet, and top with grated Parmesan.
Broil for 3-4 minutes, or until cheese has melted.
