Bruschetta Lettuce Wraps with Summer Fresh
Bruschetta
1 Head Boston
lettuce
1lb (.45kg) Cooked, crispy ground
beef
16oz (454g)
Summer Fresh Bruschetta
1¼ cup
(300ml) Grape tomatoes (cut in ½
lengthwise)
½ cup (125ml) Cooked, drained kidney
beans (canned or fresh)
½ cup (125ml) Shredded cheddar cheese
¼ cup (50ml) Chopped green onions
Chopped green
onions, garnish
1. Break
apart lettuce leaves into whole pieces. Wash in
cold water, pat with towel until dry and leave in
fridge to crisp.

In medium bowl, add ground beef,
Summer Fresh Bruschetta,
grape tomatoes, kidney beans, cheddar, green onions,
and mix together.

Remove excess water from lettuce; plate3-4
tbsp (45ml-60ml) of the mixture in the center of
each lettuce. Garnish with green onions.
Makes 10-15 small, or 5 to 7 large appetizers
