Grilled Vegetable Kabobs with Summer Fresh Spicy
Hummus
1 Red pepper, diced
into 1” cubes
1 Green pepper,
diced into 1” cubes
1 Yellow pepper,
diced into 1” cubes
1 Red onion, diced
into 1” cubes
1 Green zucchini,
diced into 1” cubes
1 Pint of cherry
tomatoes
20 Button mushrooms
2 tbsp (25ml) Olive oil
Salt & pepper to
taste
1 x 8oz (227g)
Summer Fresh Spicy Hummus
1. Soak
wooden skewers for 10 minutes. Cut red peppers,
green peppers, yellow peppers, red onion and green
zucchini into 1” cubes.
2. In
a medium bowl, place vegetables with olive oil, salt
and pepper (to taste) and toss gently.
3. Place
vegetables on skewers, alternating them for
colourful presentation. Place skewers on BBQ and
cook for 5 to 7 minutes or until cooked.
4. Place
skewers on platter and drizzle with
Summer Fresh Spicy Hummus
to taste.
