227g Summer Fresh Bruschetta
4 4oz boneless, skinless chicken breasts
4 Tbsp Olive Oil
Salt & Pepper, to taste
- Toss chicken breasts in olive oil, salt and pepper in a large resealable baggie.
- Grill chicken breasts on medium-high BBQ until chicken is cooked to an internal temperature of 74°C (165ºF). Turn chicken breasts over half way through cooking. After turning, top each chicken breast with Summer Fresh Bruschetta, 1 Tbsp of Parmesan and 1 Tbsp of Mozzarella.
- Close lid for the last minute of cooking to allow cheese to melt. Remove chicken from the grill to serving dishes and sprinkle each with chopped fresh basil to taste.
