Stuffed Zucchini with Couscous Salad


2 cups Summer Fresh Couscous Salad

NEW* Summer Fresh Beet Salad Dressing

4 tablespoons extra virgin olive oil

1 cup cubed or crumbled feta cheese

1 1/2 cups cherry tomatoes, halved

3 zucchini or yellow summer squash, halved

Kosher salt and pepper


  1. Preheat grill to medium-high heat
  2. Slice the zucchini in half the long way and toss zucchini in 2 tablespoons of olive oil, salt, and pepper. Grill the for 3-5 minutes per side or until light char marks appear.
  3. Arrange the zucchini on a platter and scoop-out centre of zucchini flesh, leaving a 1/2-inch thick shell all around the zucchini.
  4. Spoon the Summer Fresh Couscous Salad into zucchini boots and top with feta, halved cherry tomatoes and drizzle with Summer Fresh Beet Salad Dressing.
